First, it can be used as a coagulant for tofu, serving as a protein coagulant to produce tofu with a pure white and delicate texture, without the bitter taste associated with brine or gypsum, and without protein loss; it is convenient to use.
Second, it can be used as a gelling agent for dairy products in the production of yogurt or cheese.
Third, it can be used as a quality improver in luncheon meat and canned minced pork; it can enhance the effect of colorants while reducing the amount of toxic nitrites.
Fourth, it can be used as an acidifier and can be added to vanilla extract, chocolate, banana flavoring or jelly.
