Dimethyldicarbonate (DMDC), also known as Vigolin, is a fruit juice beverage preservative allowed in China's food additive use standards (INS No. 242). Under normal temperature or even low temperature conditions, DMDC has strong killing ability for many contaminating bacteria in fruit juice drinks, and its antiseptic effect is closely related to the inactivation of key enzyme proteins in the bacteria by DMDC modification. Compared with other physical sterilization technologies, the use of DMDC has low cost, simple and safe operation, and does not affect the taste, odor and color of the product, which has become one of the hot spots in the research of emerging non-thermal sterilization technology.
