What Is Natamycin Powder?
Natamycin powder is an organic compound, a natural antifungal compound produced by Streptomyces fermentation, belonging to polyene macrolides, which can widely and effectively inhibit the growth of various molds and yeasts, and It can inhibit the production of mycotoxins, and can be widely used in food preservation and antifungal treatment.
Natamycin was first isolated from Streptomyces natalis in 1955, and its activity is far superior to that of sorbic acid. In June 1982, the U.S. FDA officially approved natamycin as a food preservative and classified it as a GRAS product. Natamycin is a highly effective inhibitor of mold, yeast and fungi. It is used to inhibit mold, yeast and fungi in food. It is very safe and reliable for the human body without affecting the flavor of the product. It is widely used in the world. For cheese, meat products, pastries, fruit juice and other foods. The product is refined from streptomyces natalensis through submerged fermentation and multi-step extraction process, and its preparation is made by mixing 50% natamycin and 50% lactose.
Natamycin has a strong inhibitory effect on mold, yeast and fungus, but has no inhibitory effect on other microorganisms such as bacteria and viruses. Natamycin has a certain ability to resist heat treatment, is relatively stable in a dry state, and can withstand short-term high temperatures (100°C); but because it has a ring chemical structure and is sensitive to ultraviolet rays, it should not be exposed to sunlight. The anchor point stability of natamycin activity is affected by pH value, temperature, light intensity, oxidants and heavy metals, so the product should avoid contact with oxides and sulfhydryl compounds.

Key Benefits
1.Natamycin is an antimycotic ingredient with a broad anti-fungal activity against various moulds and yeasts. It also inhibits the formation of fungal toxins. Antibacterial Mechanism
Natamycin powder relies on its lactone ring structure to interact with sterol compounds on the fungal cell membrane to form antibiotic-sterol compounds, thereby destroying the structure of the fungal cytoplasmic membrane. The hydrophilic part (polyol part) of the macrolide forms water holes on the membrane, which damages the permeability of the cell membrane, which in turn causes the leakage of amino acids, electrolytes and other substances in the bacteria, and the bacteria die. When there is no sterol compound on the cell membrane of certain microorganisms, natamycin has no effect on it, so natamycin only inhibits fungi, and has no antibacterial activity against bacteria and viruses.

Natamycin is a natural, broad-spectrum, efficient and safe inhibitor of filamentous fungi such as yeast and mold. It can not only inhibit fungi, but also prevent the production of mycotoxins. Natamycin is harmless to the human body, it is difficult to be absorbed by the human digestive tract, and it is difficult for microorganisms to develop resistance to it. At the same time, because of its low solubility, it is usually used for surface preservation of food. biological preservatives.
The European Union has approved it to be used in the field of cheese and meat products, and the Netherlands has also approved natamycin for the preservation of apples and pears. US FDA approves natamycin as a food preservative and allows natamycin to be used on cheese. Countries in the Middle East allow natamycin to be used as a preservative in all foods. Brazil, Argentina and other Latin American countries allow natamycin to be used in cheese and meat products. Since 1997, the Ministry of Health of my country has officially approved natamycin as a food preservative, and has been approved for use in cheese, sauced meat products, smoked and barbecued meat, fried meat, Western-style ham, meat enemas, and fermented meat products Surfaces of vegetables, pastries, juice purees, and mold-prone food processing vessels, and added to fermented wine, mayonnaise, and salad dressings. The US FDA has approved the addition of 11ppm natamycin to feed to improve feed mildew. In 2000, Wyatt et al studied the application of natamycin in feed. They inserted 191 strains of Aspergillus that may be contaminated in feed into gradient plates containing natamycin, and found that the minimum lethal dose (MIC) of various Aspergillus was below 0.4g/L.
Application Examples
1.Spraying a natanycin solution of 300mg/L in an aqueous solution on the surface of the cake can protect it from the mould growth and extend its shelf life.
2.Dipping the sausage in 300mg/L natamycin aqueous suspension can prevent it from mould growth and slime or sticky surface development.
3.Adding 5-10mg/kg of natamycin in wine, fruit and vegetable juices can prevent them from spoilage and extend their shelf life.
4.Spraying natamycin suspension of 300mg/L in an aqueous solution on the surface of cheese can prevent the cheese from mould growth and extend its shelf life.
Medical Use
Natamycin is used to treat fungal infections, including Candida, Aspergillus, Fusarium, etc. It is also used as eye drops or oral medicines. In these applications, the body absorbs less natamycin. When taken orally, there is little absorption from the gastrointestinal tract, thus making it unsuitable as a systemic infectious agent. Natamycin is also used in eye drops, and its 5% natamycin content is suitable for the treatment of fungal blepharitis, conjunctivitis and keratitis caused by microorganisms, including Fusarium solani keratitis.
Natamycin Powder Range Of Use
GB 2760-2014 "Guidelines for the Use of Food Additives in National Food Safety Standards" stipulates that natamycin can be used in cheese and processed cheese and its analogues, pastries, sauced meat products, smoked barbecue meat, fried meat , Western-style ham, meat enema, fermented meat products, mayonnaise and salad dressing, fruit and vegetable juice (pulp) and fermented wine 11 types of food.
Natamycin should not be used in other foods other than the above food categories. It should be noted that in the food classification of GB 2760-2014, pastry and bread are two types of products. That is to say, natamycin cannot be used as a preservative on bread. And if natamycin is added during the bread making process, it will inhibit the fermentation of the yeast and cause the bread not to rise.
