L-methionine, also known as l-methionine, is the l-handed version of methionine. Colorless or white luster flake crystal or white crystalline powder, slightly with a special smell, taste slightly bitter. Melting point 280 ~ 281℃. The instability of strong acids may lead to demethylation. Soluble in water (5.6g/100mL,30℃), lukewarm dilute ethanol, alkaline solution or dilute inorganic acid. It is insoluble in ethanol and almost insoluble in ether. Toxicity: LD50, 29mmol/kg (rats, intraperitoneal injection).
