What Is Chitosan Hydrochloride Powder?
Chitosan powder, the product of N-deacetylation of chitin, chitin, chitosan, and cellulose have similar chemical structures, cellulose is a hydroxyl group at the C2 position, and chitin and chitosan are at the C2 position Chitin and chitosan have many unique properties such as biodegradability, cell affinity and biological effect, especially chitosan containing free amino groups, which is the only natural polysaccharide alkaline polysaccharides.
The amino groups in the chitosan molecular structure are more reactive than the acetamido groups in the chitin molecule, making the polysaccharide have excellent biological functions and can undergo chemical modification reactions. Chitosan has a wide range of antibacterial effects, but different concentrations of chitosan have different antibacterial capabilities. For example, when the concentration of chitosan is 0.1%, it can completely inhibit the reproduction of various molds of the Fusarium genus within 8 days, but the concentration It has no effect on molds such as Rhizopus, Penicillium, and Aspergillus. When the concentration is 0.4%, it has a strong inhibitory effect on Escherichia coli, Proteus vulgaris, Bacillus subtilis and Staphylococcus aureus. In addition, chitosan with different degrees of deacylation has different antibacterial properties, and chitosan with a high degree of deacylation has strong anti-mold ability. One of the reasons is that chitosan interacts with the surface of fungal cells to increase the permeability of the cells. The antibacterial effect of chitosan, sodium acetate and adipic acid is more obvious without affecting the flavor of food.
The antibacterial effect of chitosan mainly has the following two mechanisms:
One is that chitosan forms a layer of polymer film by adsorbing on the cell surface to prevent the transport of nutrients into the cell, thereby playing an antibacterial and bactericidal effect;
Another mechanism is that chitosan penetrates into the cell body, adsorbs the cytoplasm with anions in the cell body, and flocculates, disturbing the normal physiological activities of cells, thereby killing bacteria. Because the cell wall structures of Gram-positive bacteria and Gram-negative bacteria are different, the two effects have different effects on them, so chitosan with different relative molecular weights has different antibacterial mechanisms.
Chitosan is a dietary fiber that has the functions of lowering serum cholesterol, regulating intestinal flora, and lowering blood pressure. After the human body ingests chitosan, stool analysis shows that it is hardly digested and absorbed, so it is a kind of dietary fiber. Studies have shown that chitosan has some properties of dietary fiber, such as water retention, swelling, adsorption and indigestible absorption, etc., can promote digestive tract peristalsis, absorb toxic substances, increase defecation volume, reduce abdominal pressure and intestinal pressure , Improve the occurrence of constipation, etc. The physical and chemical effects of chitosan and gastric mucin are similar, and it has the functions of inhibiting gastric acid, anti-gastric ulcer, and anti-inflammation.
