Calcium gluconate powder is an organic calcium salt with a chemical formula of C12H22O14Ca, a white crystalline or granular powder in appearance, a melting point of 201°C (decomposition), odorless and tasteless, easily soluble in boiling water (20g/100mL), slightly soluble in Cold water (3g/100mL, 20°C), insoluble in organic solvents such as ethanol or ether. The aqueous solution is neutral (pH about 6-7). Calcium gluconate is mainly used as calcium fortifier and nutrient, buffer, curing agent and chelating agent in food.
